fat
1.
A chemical combination of fatty acids that is part of food and one of the three common sources of nutrients (the other two being carbohydrates and proteins). In nature, most fats are made of three fatty acids connected to a glycerol molecule. Some examples of fats are vegetable oils (e.g. soybean oil, canola oil, olive oil), animal fats (e.g. lard, tallow), and dairy fats (e.g. butter). The term oil is usually used to refer to a fat that is liquid at room temperature.
Lean meat is often less flavorful than fatty meat because a lot of flavorants and aromatics are actually in the fat.
