1. A technique for mixing and working dough in order to make it into an elastic mass, either by hand or machine (e.g. mixer with dough hook or food processor). Kneading by hand is done by pressing down into the dough with the heels of hands and pushing away from the body, then folding the dough in half and giving it a quarter turn, and repeating the process.
