1. In general, the word sugar refers to sucrose - specifically in its relatively pure form extracted from sugar cane or sugar beets. When used in the context of nutrition, sugar is used to refer to any monosaccharide (e.g. glucose, fructose) or disaccharide (e.g. sucrose, lactose). See granulated sugar.
